Our chef Katja Ferris is native German and we are a woman-owned business based in the San Francisco Bay Area. We are proudly rooted in our East Bay community….and upon first taste, the calling was clear from within our diverse community: We want Spätzle on our dinner table and as a school lunch for our children! Spelt flour:
Spelt, also known as Farro Grande, is an incredibly flavorful grain that originates in the area between the Black Sea and the Caspian Sea. Spelt has similar baking characteristics to wheat but can be easier to digest than common wheat thanks to its higher water solubility.
Einkorn:
Arguably the worlds oldest cultivated wheat, Einkorn’s flavor is mild, nutty and round, dark and mysterious. Also known as “farro piccolo,” Einkorn is the oldest member of the family that includes Spelt and Emmer. Its ability to develop strength may be disappointing but is also one of the reasons it’s easier to digest than wheat. In fact, many people with wheat sensitivity find they have no problem with Einkorn.
Fancy Durum:
This organic pasta flour is just the endosperm of the durum berry with a fancy name. Or you can think of it as Semolina milled down to a fine flour granulation. The fine granulation makes absorption consistent and pasta silky smooth with a high protein / high gluten content. Durum wheat also has some interesting health properties. Compared to regular wheat, it’s higher in folate, lutein and fiber, and has a lower glycemic index. Simply put, this flour lives up to its name!
